When having your own greenhouse filled with different breeds of tomatoes, you never know when you will be surprised with that perfect vine of tomatoes that look like straight from ad (especially me, a total beginner at this). After taking over our little greenhouse and taking care of it all summer, these were my first vine ripened tomatoes and they inspired me so much, that I couldn't wait and ate them straight away, on a bruschetta of course (I'm not that impatient). Even a lack of appropriate bread couldn't stop me, because the smell of them was divine and they were the most beautiful red there is. 



You will need:
Tomatoes (cherry or any other kind, sliced, amount depending from choice of bread)
3 stems of parsley
4 basil leaves
salt, pepper
4 slices of bread
1 garlic clove
olive oil

1. Heat oven to 180C. Put your bread on baking tray and sprinkle with olive oil. Put in oven for 7-10 minutes, depending on choice of bread.
2. Cut parsley and basil, add to sliced tomatoes and mix. Season with salt and pepper. If you want an extra punch, add some onion.
3. After taking the bread out, rub with garlic and top with tomatoes. Enjoy! And yes, it is so simple!
