I have been dreaming of making my own ice cream for two summers in a row now. But what was stopping me was the fact that we do not own an ice cream maker (desire to buy one was too weak, our kitchen is full with different kitchen supplies as it is) and  it is really difficult to find a recipe that does not call for one or does not slam making ice cream without one as a sin or something. After reading a dozen of articles about ice cream making and ice cream recipes I decided to make my own simple ice cream recipe. And you know what? It totally worked and I now regret that I have not done it sooner (but maybe it's the right time, right place situation?). Read on for the best summer ice cream recipe that is both refreshing, sweet and tingly with the right amount of sourness to it. 





Nepieciešams:
250 g nomizotu rabarberu, sagriezti nelielos gabaliņos
60 g cukura
30 ml ūdens
120 ml saldā krējuma
150 g maskarpones siera

1. Nelielā katliņā abarberiem pievieno ūdeni un cukuru un uz lēnas uguns sautē aptuveni 5-7 minūtes, kamēr rabarberi iegūst mīkstu konsistenci. Noņem no uguns un atdzesē. 
2. Bļodā sajauc saldo krējumu un maskarponi līdz iegūst vienmērīga krēma masu. Tad pievieno rabarberus (var sablenderēt, ja vēlas viendabīgu konsistenci) un samaisa. 
3. Tad masu liek aukstuma izturīgā un aizvākojamā traukā un iekšā saldētavā uz 2-3 stundām. Ideāli masu būtu apmaisīt ik pēc 30 min, bet es to paspēju izdarīt tikai divas reizes un, manuprāt, saldējums no tā sliktāks nepalika. 

You will need:
250 g cleaned and sliced rhubarb
70 g sugar
40 ml water
120 ml whipping cream
150 g mascarpone

1. In a small pot put together rhubarb sugar and water - stew for about 5-7 minutes until soft. Let rhubarbs cool.
2. In a bowl mix together whipping cream and mascarpone until smooth, add cooled rhubarb (it can be blended if you want a smoother consistency).
3. Put the mix in a container and into the freezer for 2-3 hours. Now ideally you should mix the mixture once in a half an hour, I did it only twice and did not affect the quality in any way.

  3. So is that all an ice cream maker does? It freezes and stirs the ice cream? I've always wanted to make my own ice cream too, but I don't have an ice cream maker and the recipes that had very strict directions "YOU MUST MIX EVERY HALF HOUR" scared me off. Good to know that ice cream doesn't have to be complicated!
